Wow! The weeks are flying by. It just seems like I sat down to write last weeks meal plan. Sheesh!
One of the meals from last week that was noteworthy was the polenta pizza.
Really good. Ron actually tackled the job of preparing it. He made three options – cheeseless, less cheese, and more cheese(of course that was for him). I’m sure my mom is laughing at me right now for saying something with polenta was really good. I absolutely refused to eat polenta growing up. My Italian grandmother always made that as part of her big Sunday meal. If I’d only knew then what I know now…I missed out on a lot of good things!
I’m loving easy meals lately. If it takes more than an hour, requires lots of chopping and more than 2 dishes, I’m not doing it. Here’s what the week is looking like at our house:
Sunday: Veggie Stuffed Peppers w/ chickpeas
Monday: Butternut Squash Ravioli with roasted veggies
Tuesday: Roasted Cauliflower Pizzette w/ Kale and Brussels Sprouts Salad
Wednesday: After work party for Mama. Ron and the kids get leftovers!
Thursday: Spinach Gratin w/ Crunchy Crumb Topping
Friday: Black Bean and Spinach Quesadilla
Saturday: Leftovers

Your polenta pizza looks better than mine did… way to go Ron! I also made a few short cuts and turned it into more of a baked polenta with veggies and cheese to save time.
Oh, I hear you on the heavy heart. I was feeling better yesterday and then made the mistake of reading the updated news report in the WSJ last night and all the emotions came flooding back. Just awful.

I didn’t think pizza could ever be bad until I did have a REALLY bad pizza.
My kids eat just about anything their Italian Nonna makes. She hasn’t offered them polenta though. I wonder if they would go for it? I know they wouldn’t eat it if I made it! Anyway, the pizza looks yummy!! 🙂

The pizza looked good but, unlike you, I still haven’t moved past a childhood dislike of polenta. And, I better get on the meal planning or else we will end up eating junk! Maybe soup every day – it is easy!!!

I definitely didn’t become a fan of polenta till recently. It always seemed like “mush” to me.

Finely chopped spinach. My kids won’t touch it if it’s any bigger. 🙂
One thing that has become a standby favorite is soup and sandwich night. I make either homemade tomato soup or butternut squash soup and then we make all kinds of yummy paninis with our waffle maker (ha!) on Ezekiel bread (our fave!). So easy and yummy.
