Meal Planning: Week of August 25

It’s Sunday Funday!

Every weekend, I usually pour through Pinterest, my favorite food blogs and online recipe searches for meal planning ideas. So many options! I can’t remember the last time I actually bought or opened a cookbook. Are they still out there?

Lately, I haven’t been the best about following my meal plan. Things come up that prevent me from having the time to make a certain meal on a busy night or that food just doesn’t sound good. I think maybe we ate two of the meals that I had planned. Tuesday was one of the “on the fly” days. Nothing sounded good and I wanted something really easy. I looked in my fridge and found Lavash bread, barbeque sauce and veggies. The idea for a Barbeque Black Bean Lavash Pizza was born.

Barbeque Black Bean Lavash Pizza - happyfitmama.comSo good and so easy! Black beans, red onions, pineapple chunks and mozzarella are the toppings I used but the possibilities are endless. Ron kept on raving about how good it was, too. I definitely will be making this again.

Sunday: Something fish – maybe Salmon Kebabs or Scallops (if not ridiculously overpriced right now).

Monday: Tex Mex Pasta

Tuesday: Cornbread Panzanella Salad

Wednesday: Ron’s homemade pizza

Thursday: Chickpea “Meat”balls

Friday: Leftovers

Saturday: Dinner out

  1. I don’t always follow my meal plan .. I like to have it so I am able to stock the fridge and have food on hand, but if the day doesn’t go in a direction where I;m able to makewhat’s planned, I don’t worry too much about it and just go with it. I can make it another night 🙂
    That corn bread panzanella sounds yummy!! Definitely would love to try that!

  2. Yes I write a meal plan, but some days it just doesn’t happen. With me doing whole30 I’m eating a lot of left overs, which I don’t mind some days, other days I would totally like something else.
    It’s hard cause I’m feeding me and then 2 kids, who sometimes eats everything in site and then days when they hate everything. Let me tell you I have a new appreciation for mum for sure.
    This week I’ve written a rough meal plan for my meals for the week utilising all the leftovers.
