I’m baaaack!!! Did you miss me?
My little blogging break was fantastic. I got to spend a lot of time with my parents and really just kick back and relax. Much needed. I’ll get into all of that tomorrow so let’s talk food right now, specifically meal planning. The last meal plan I posted (2 weeks ago) was a complete bust. We didn’t have one single thing that I planned. With being on the go most of the day playing tourist, we usually ended up eating lunch out. That meant dinner usually ended up being something light and on your own. I decided to not even plan for this past week because it would be more of the same.
This week, I’m ready to buckle down and get back to “normal” eating. I need a detox from eating out and over indulging.
Here’s what I’ve got planned for the week:
Sunday: Cilantro Lime Hake
Monday: Quinoa Kale Patties
Tuesday: Zucchini and Bean Quesadillas
Wednesday: Veggie Potstickers
Friday: Green Smoothie Pancakes
Saturday: Ricotta Cheese and Pears Pizza
