Happy Sunday to you!
I hope you are having a great weekend. After what seemed like days and days of rain, we had two absolutely gorgeous days in a row. I know the rain helps everything bloom and turn greener but I’d love to me able to enjoy more than a day here or there without being a completely soaked. Or soaked and freezing. There was one day last week that my hands and feet went completely numb during my son’s baseball game.
So.not.fun.
We got back from a few days away in North Conway for the kids’ April vacation. If there’s one thing I really dislike about vacation time away is eating out. I like eating out but can only handle it for a day or two before everything starts to look gross. I’d much rather rent a house or condo so I can have the option to have my own usual food for at least some meals. I was so giddy to eat my usual foods after restocking the fridge and pantry yesterday. It’s good to mix it up but the usual routine can be a good thing too.
It’s Sunday, so it’s meal planning time. Here’s what’s for dinner this week.
Sunday: Honey Chiptole Salmon + Roasted Broccoli and Red Potatoes
Monday: Sheet Pan Pancakes –> pure genius!
Tuesday: Grilled Fish Tacos
Wednesday: Big Burger Bowl
Thursday: Sweet Potato Quinoa Fiesta Bake
Friday: Ron’s homemade pizza
Saturday: Wing it!
