Happy Sunday everyone! It’s meal planning day again.
It seems like I just wrote this last week but I’m off to another race today. I’m doing Wallis Sands Half Marathon – one of my favorite local races. I’m not sure how much of a race it will actually be for me. I want to think of it as a training run but I know I will get caught up in the excitement and will end up running harder than a normal long run. That means I’ll probably won’t go for the 20 miles total for the day. The plan right now is to do a few beforehand and then see how I feel afterwards.

Monday: Southwest Quinoa Sliders
Tuesday: Heather’s Roasted Cauliflower, Broccoli, Chickpeas and Tofu
Wednesday: Ron’s homemade pizza
Friday: Lindsay’s Cottage Cheese Egg Muffins
Saturday: White Bean Avocado Wraps
