Meal Planning: Week of April 28

Happy Sunday everyone! It’s meal planning day again.

It seems like I just wrote this last week but I’m off to another race today. I’m doing Wallis Sands Half Marathon – one of my favorite local races. I’m not sure how much of a race it will actually be for me. I want to think of it as a training run but I know I will get caught up in the excitement and will end up running harder than a normal long run. That means I’ll probably won’t go for the 20 miles total for the day. The plan right now is to do a few beforehand and then see how I feel afterwards.

Alright, let’s talk food!

Eats from the week 4 dinners -

Here’s what I’ve got planned for dinner this week:

Sunday: Dinner out

Monday: Southwest Quinoa Sliders

Tuesday: Heather’s  Roasted Cauliflower, Broccoli, Chickpeas and Tofu

Wednesday: Ron’s homemade pizza

Thursday: Leftovers

Friday: Lindsay’s  Cottage Cheese Egg Muffins

Saturday: White Bean Avocado Wraps

What are you having for dinner this week?

  1. You always have some of the best looking food pictures and recipes!!
Good luck on the half – hope you are able to keep it as a training run and not get too wrapped up in the race atmosphere (I know that’s hard!!).

  2. All of that food looks fabulous! I’m reading your posts backwards (I didn’t have time to go through my email this weekend), so Ill say congrats on the Half-marathon!! :):):):):))
