On Friday I mentioned that I have been feeling quite tired this past week. My initial thought was because of the increased mileage in training and seasonal allergies. Friday morning I got the answer – I’ve got a big fat cold! Boo!!! It’s nothing horrible but it’s the kind that leaves you stuffed up and having to breathe through your mouth. Poor Ron has been enjoying my rank sick breath at night when he makes the mistake of facing me while sleeping. Good times.
On that note – It’s time for meal planning again!
I’ve been freezing ever since my 16 miler Saturday morning so right now nothing but warm soup sounds appealing to me. But I know I won’t want to eat soup all week. There were a lot of great recipes floating around in the blogoshpere this week. One that I’m excited to try is the Thai Quinoa Salad. Sounds yummy!
Here’s the plan as of right now:
Sunday: Baked Salmon or salmon tacos
Monday: Black Bean, Sweet Potato and Spinach Quesadilla
Tuesday: Crunchy Cashew Thai Quinoa Salad
Thursday: Bow Tie Pasta Primavera w/ Avocado Pesto
Friday: Egg Sandwiches and green smoothies
Saturday: Clean out the fridge!
