Before we get into meal planning for the week can I just tell you that I am tired. Yesterday was one very, very long day. The kiddos decided to wake up at 5 a.m. I had moved my long run for the week to Friday (more on that tomorrow) so I was hoping to “sleep in” a little. Well, that didn’t happen. From the moment they woke up it was nothing but whining, sass and crabbiness for all four of us. So when it came time to sit down and meal plan for the week, I was delirious and ready for bed.
Fingers crossed today is a better day!
Sunday: Dinner out
Monday: “Pick your egg” sandwiches + baked sweet potato fries
Wednesday: Baked Broccoli Slaw Egg Rolls + Nutty Veggie Noodles
Thursday: Crock Pot Chicken Enchilada Soup
Saturday: Ron’s homemade pizza
