Meal planning for the week is here again. I’m feeling quite uninspired this week on the cooking front. It was on a roll, there for awhile. Now nothing really sounds good.

I’m planning this for the week, but who knows what we’ll actually be eating. Fingers crossed I get inspired to cook up a storm. Or maybe Ron will? That would be interesting.

Sunday: Baked Salmon + roasted root veggies

Monday: Sweet potato and mozzarella egg skillet

Tuesday: Black bean and butternut squash enchilada casserole

Wednesday: Spicy Chickpea Kale Bowls

Thursday: Chicken Avocado Lime Soup

Friday: Leftovers

Saturday: Dinner out?

  1. I hear you. Sometimes I plan and want none of it. I will do a lot of base cooking on Sunday though, and then mix and match if I’m not feeling things during the week. I try to keep a lot of emergency meal ideas on hand to make last minute decisions too, without having to head to the store hungry..

  2. This weekend was kicked off with payday Friday! The first pay of each month I shop for groceries and meal plan for several weeks! Starting off this week with some easy chicken noodle soup! I love meal planning! I love restocking my fridge, freezer and pantry with healthy meal choices. Always all natural, organic and home cooked.
