I’m so ready to get my meal planning on today. After a week of vacation and not eating my “usual” food followed up with playing nonstop catch up since we’ve got home, I’m looking forward to the usual routine. It’s nice to vary from the norm but routine is good too.
Even though the weather hasn’t been feeling too summer like, I’m feeling the need to use the grill more often. Side note – yesterday totally felt like a really nice fall day in late September or October rather than June. WTF?!?! This week, I have 3 nights of meals planned for the grill. I love grilling a boatload of veggies to have on hand for the whole week too. If the grill’s on, why not?
Here’s what’s for dinner this week in my house.
Sunday: Grilled Cedar Plank Salmon + veggies
Monday: Green Pancakes (late baseball practice)
Tuesday: Easy Chicken Fajita Power Bowl
Wednesday: Grilled Haddock + Pesto Zoodles
Thursday: Southwest BBQ Chicken Salad
Friday: Ron’s homemade pizza
Saturday: Dinner out
