Can I press pause?
Time is flying way to fast these days.
So it’s Sunday and meal planning time. And I’ve got a confession to make.
I’ve been slacking on my food prep and meal planning BIG time for the past month or so.
The weekends have been busy and I haven’t been making time for prep. It doesn’t help that nothing really sounds good either.
I’m kind of in a food funk.
Now that I’ve confessed, I’m vowing to get back on the weekly food prep bandwagon. I’ll be making a big pot of quinoa (maybe I’ll make Johanna’s Quinoa Porridge Breakfast Bowl one morning), baked sweet potatoes and 3 Ingredient Cookie Bites for snacks.
I also vow to find new recipes that I’ll follow through with.
So here goes –
Sunday: Thai Peanut Noodle Veggie Stir Fry
Monday: “Cheesy” Quinoa Bowl (above picture)
Tuesday: Fish tacos with broccoli slaw
Wednesday: Spinach Artichoke Chicken
Thursday: Grilled Veggie Fajita Salad – didn’t get to make it last week
Saturday: Leftovers/clean out the fridge
