Just a quick pop in today for meal planning! I’m not feeling terribly inventive for meal ideas this week, so of course, I consulted my Pinterest boards to get inspired (and hungry).

Here’s what’s on the menu this week:

Sunday: Broiled Spicy Brown Sugar Salmon



Monday: Pick your egg sandwiches

Tuesday: Sweet Potato Quinoa Cakes



Wednesday: Black Bean, Roasted Veggie Taco Bowls

Thursday: Crockpot Orange Chicken



Friday: Leftovers

Saturday: Brinner

  1. The sweet potato cakes looks yummm! I get great ideas from your planning, but following through is the weak link for me. I hate shopping! I am determined to make those πŸ™‚

    1. Had the salmon Sunday – Fantastic! Had the sweet potato quinoa cakes tonight – delicious! Quinoa is very versatile. It can be used as a grain like rice, pasta, etc or even a breakfast cereal like oatmeal. I’m posting a recipe tomorrow that has it in it.
