Meal Planning: Week of April 6

Ever have one of those weeks when nothing sounds good?

That was mine last week. I had planned a delicious week of meals and then when it came time to actually make the food, I wasn’t feeling it. If it was up to me, I would have had some form of a pancake or cereal for every single meal.

But…we didn’t.

This is another week and I’m back at meal planning. Maybe my appetite will shift back to normal. Hopefully it will since one can not live on pancakes and cereal alone.

Sunday: Thai Peanut Salad with Salmon

  1. Yes, I had one of those weeks a few weeks ago. If it was up to me I wouldn’t have bothered to eat at all. On the other hand, last week my menu planning rocked! Hopefully that will happen again this week 🙂

  2. Oh – I want to come on Wednesday!!! Avocado black bean salsa is one of my favorite things ever and to put it with grilled lime chicken sounds delicious!!
    Dinners will be more relaxed for us this week – we actually have a week were the boys don’t have any evening activities – Chris and I have a couple of night things but mostly we will all be home for dinner together – hooray!!

  3. The middle of my week was a little bit like that…I wasn’t inspired to do much cooking (unlike the week before). My husband is going to be out of town much of this week, so I’m sure I am going to be challenged again with cooking. I’ll probably be fishing stuff out of the freezer, since I’m only cooking for myself and the toddler.
