Hey there!

Currently, I am wrapped up in a gigantic down blanket freezing to death. It’s hard to believe that on Friday, it was a humid 70 degrees. We even went out for ice cream after dinner to celebrate our local favorite scoop shop’s opening day. And now it is raining and cold. The forecast is calling for snow Sunday morning. Yay. So much for spring being here. Ugh. I heard it put very well by a DJ on the radio – Mother Nature is more confused that I was in my 20s. She doesn’t know what she wants right now!

With Friday’s gorgeous weather, I had visions of hiking on Sunday. Or maybe cleaning up the yard. ANYTHING to enjoy being outside. Well, those plans have obviously been scraped. Maybe I should spring clean the house? I know…Sunday Funday to the max.

It’s Sunday, so it’s meal planning day. Here’s what’s for dinner this week.

Sunday: Grilled Salmon with Kale and Blueberry Salad

Monday: Crockpot Black Bean Quinoa Soup

Tuesday: Skillet Spaghetti and Meatballs

Wednesday: Tuna and White Bean Salad with Kale Pesto

Thursday: Thai Chicken Zucchini Noodles w/ Spicy Peanut Sauce

Friday: Pizza Night

Saturday: Wing it

  1. This looks like an amazingly delicious meal plan. That kale salad looks SO GOOD! I seriously need to make it asap! I can’t quite afford the whole meal plan right now, but I’m sure with a couple little tweaks I can make it work 😉 Thanks for sharing!
