Meal Planning: Week of April 13

Happy Sunday Funday!

I hope you are having a lovely, lovely weekend. We are busting out of hibernation and taking full advantage of Spring right now. It’s absolutely wonderful! I hope you are enjoying good weather as well.

Yesterday I ran a 5k and was pleasantly surprised with the results. Maybe this 5k thing isn’t so bad after all…More on that tomorrow.

I’m hoping today is filled with more warmth and the rain showers stay away. I don’t want to be inside!

I’m just popping in to share meal planning for the week. I’m craving fresh Spring produce like greens and asparagus. The changing of the seasons means changing of my appetite.

Here’s what I’ve got planned:

Sunday: Grilled Salmon and massaged kale salad

Monday: Baked Eggs

Tuesday: Chicken and Asparagus Stir Fry

Wednesday: Build your own taco bar

Thursday: Sweet Potato Black Bean Burgers – didn’t get to make these last week!

Friday: Leftovers

Saturday: Crispy Peanut Tofu Peanut Bowl – Pic above -> the BEST tofu dish I’ve ever had. Maybe because Ron had it waiting for me after being at work for 9+ hours? Whatever the case, it was delicious and I want some more!

  1. Oh, I’m lovin’ the warm spring weather here in Colorado. Today is actually a little rainy, all the better to stay in and do some meal planning. Thanks for the recipes. I def. want to give the sweet potato black bean burgers a try. Yum!

  2. We have been enjoying spring but this afternoon has been thunderstorms and it is supposed to turn into snow later tonight – crazy since it was 80 yesterday.
    Meal planning this week is a bit off – Chris is going to be gone the first part of the week and then we have some evening activities the end of the week!

    We’re crazy here, with my youngest involved in track and spring football–we’re trying our hardest to keep it healthy. Tonight is turkey burgers, pork loin chops and sweet potatoes tomorrow, and a new recipe-kung pao tacos (should be interesting!). All light but family friendly…

  4. Asparagus is so yummy with everything πŸ˜‰ What are baked eggs? Glad you enjoyed the 5K – look forward to the recap. I must be the only nut that loves 50 degree days. It went into 80’s here last week and I struggle with running in the heat.
