It’s week 2 of the What’s For Dinner? Meal Planning Challenge.
Last week went well. I switched around a few days just because Buddha’s Delight sounded better than Veggie Chili one night.
Here’s this week’s dinner plan:
Sunday: Ron’s homemade pizza
Monday: Breakfast for dinner – eggs and pancakes
Tuesday: Pumpkin Spinach Quesadillas and black bean salad
Wednesday: Sweet Potato and Kale Pockets
Thursday: White Bean “Cheese” Burgers
Saturday: Dinner out
Friday night, the party animal that I am, I started combing my recipe binder, Pinterest and other blogs for ideas for this week.The Pumpkin Spinach Quesadilla is actually from a magazine our local grocery store puts out. I’ve made a sweet potato quesadilla hundreds of times for my kids (it’s one of their favorites) so I thought I’d try it with pumpkin this time. We’ll see how it goes over.
