It’s week three of the Meal Planning Challenge!
I feel like I’m getting back into the groove of planning our dinners. Throughout the week, I find myself pulling and tagging recipes out for the following week. By the weekend when I shop, I have a list ready to go.
Last week went well. The Pumpkin Spinach and Bean Quesadilla’s were the highlight!
I swapped the White Bean “Cheese” Burgers for a crock pot lasagna on one night so they’re back on the plan for this week.
Monday: Zucchini Feta Flapjacks
Tuesday: Roasted Chickpea Tacos
Wednesday: Peanut Noodles and Veggies
Thursday: White Bean “Cheese” Burgers and roasted veggies
Saturday: Clean out the fridge dinner or eat out 😉
