At one time in my life, the only eggs I would ever eat were scrambled.

Hard-boiled, over easy, fried, poached? No way!

But then, almost five years ago, I was 4 months pregnant and in a prenatal yoga class. One of the expecting moms was talking about how her love of hard-boiled eggs and egg sandwiches had grown ever since being pregnant. At that instant, I had never wanted another food so much in my life. I left that class and immediately looked up how to make hard-boiled eggs as soon as I got home.

It was love at first bite!

Still today, I have eggs at least 1-2 times a week if not more. Breakfast, lunch, snack or dinner – it’s all good.

I like to know where my eggs are coming from.   1. I am a vegetarian, for mainly ethical reasons. That said I do eat eggs, BUT…they have to come from a local farm where I know the farmer treats the chickens well. “Happy eggs” as we call them in our house. My boss at the gym (don’t you love Vermont?) raises chickens so I typically get the eggs from him. However, when he is out, if I run to the local grocery store, Nellie’s is one of the brands I do reach for! It’s not only “cool” to be kind…it’s the ONLY way we should be <3

  2. My love for eggs grew with each pregnancy, too! We always buy cage free eggs- sometimes organic, sometimes not- I wish we had a farm here to buy directly from. It’s cool to be kind because our words and actions are so powerful! We have no idea how it might turn someone’s day around.

  4. I’ve always been an omelet girl – I grew up with my father making a large breakfast every Sunday after church and I always looked forward to those omelets! It is cool to be kind because it’s rude and not cool to be mean! Being kind makes everyone happy 🙂

  13. It is cool to be kind as you get so much back from an act of kindness. I did something one day for someone not realizing that it was being noticed by others until later they told me how great I had been to do this deed without expecting anything in return. Things go around in a circle.

I love caged free chickens becasue it bugs me when I find out that these poor chickens are shut up in a cage and can never see sun or breath fresh air. How sad.
