It’s another WIAW! All the leftovers from Thanksgiving are long gone. We finished off the last of the Pumpkin Cheesecake on Monday – sad to see it gone but we need to take a break from each other. I just can’t quit you Pumpkin Cheesecake!
Tuesday morning I did something I haven’t done in months – I made a green protein smoothie for breakfast!
Kale Protein Smoothie
2 handfuls of fresh organic kale (frozen works too)
1/2 frozen banana
spoonful of almond butter
3/4 cup unsweetened vanilla almond milk
1 scoop chocolate protein powder
Blend all together till smooth!
I always seem to forget about smoothies once the weather turns cold. So good! In fact I had to fight off two ankle biters trying to get a taste.
Makes me wonder, will I ever be able to enjoy my own food again?
Despite my lack of interest in cooking food this week, I’ve had this intense urge to bake. Cookies, cake, brownies. Anything. It’s the Holidays. I don’t want to burn out on baking just yet (and I don’t want all that yumminess staring at me), I’m suppressing the urge. Instead I made a healthier alternative that has just a hint of Holiday to it.
Chocolate Peppermint Balls
I just took my usual date/nut ball recipe and added an 1/8 tsp of Pure Peppermint Extract. Definitely hit the spot with a little Holiday taste.
Other random foods I’ve been loving this week:
L to R: Morning oats with pomegranate seeds, Kashi Heart to Heart cereal mixed with PB, honey and vanilla and pressed into bar shape, sautéed veggies with pesto sauce, and chick peas, Cauliflower Leek Soup & crusty bread (always a requirement for soup!)
Last nights dinner was a favorite from a long, long time ago. Because I can never get enough of greens in a day, we had Spinach and Kale Turnovers. It’s like a little veggie dessert pie but savory rather than sweet. On the side, roasted sweet potato fries. Another veggie that I just can’t get enough of. Mmmmmmm!
