It’s the last Wednesday of the month and I’m just now bringing up the theme for this months WIAW – Fall Into Good Habits. For the past few months, my meal planning each week has fallen by the wayside. There was a time, not so long ago, when I’d take out my recipe binder, search my favorite blogs, and stroll through Pinterest every Sunday prior to hitting the grocery store for the week. I’d pick out 2-3 recipes for dinner that week. We’d have leftovers for some of the other nights or just do a “free for all” night in whatever sounded good. But then the summer heat came along and nothing sounded good and not having a set schedule was kind of nice. Summer is over (wahhhhhhh!) so it’s time to fall back into my good habit of meal planning. I actually did really good last week so I think I’m getting back into the swing of it. I also decided to do Laura and Jill’s Menu Planning challenge in October. Perfect timing to give me that little extra kick in the butt!
Here’s a few of my favorite dinners and a lunch from the past week:
Honey Chipotle Salmon, roasted mixed veggies, Alexia Sweet Potato Roll (yum!), Trader Joe’s Roasted Black Bean and Corn Salsa over spinach, tomatoes, cucumbers and guacamole, Black Bean and Spinach Enchiladas w/ chunky salsa guacamole, Sweet Potato Lentil Soup.
In case you didn’t notice, I’ve been on a serious guacamole kick lately. I can’t get enough! You know what else I can’t get enough of? Honey Crisp apples. My absolute favorite next to Pink Lady. We got these from a local orchard and have been plowing through the bag. I think we need to go back this weekend for more!
Of course, I’m still getting my pumpkin fill daily, too. I made a really great Pumpkin Pie Smoothie for my post run recovery on Sunday. Tasted just like Pumpkin Pie but better since I’m not the biggest pie fan.
