We survived Nemo and the #snowpocolypse! I’m hoping to get my long run in today. Fingers crossed it happens. I don’t think I can fathom 12 miles on the treadmill. We’ve all been kind of going NuttZo since being snowed in.
Speaking of going NuttZo…
I recently was sent a jar of NuttZo. I’ve never seen it in any of my local stores but have been dying to try it. After all, I am a nut butter fanatic. I don’t think a day goes by where I don’t have at least one spoonful or three. Peanuts, cashews, almonds, hazelnuts, Brazil nuts, sunflower seeds and flax seeds all combined in one jar with no added sugars, hydrogenated oils? Pure heaven in my mind.
Each bite is full of crunch. I’ve been putting it on and in everything from oatmeal, fresh baked bread, green smoothies, green pancakes and in cookies. It was hard for me to do but I even shared with A and L. I hope they appreciate the sacrifice I made for them.
They absolutely loved it! It’s great on everything but I especially like it straight up out of the jar on a spoon. Or a finger. What? Don’t tell me you don’t do the same thing!
The story behind NuttZo is enough to make me love this company even if it didn’t taste fantastic. Danielle, founder and CEO, started NuttZo after wanting to find highly nutrient dense foods for her two adopted sons who were vitamin deficient. In the process she started Project Left Behind to help orphans in need around the world.
How can you not love a company like that? Real food. Real people. Really awesome.
Here’s what I’ve got planned for meals this week:
Sunday: Honey glazed salmon and roasted winter vegetables
Monday: Green Berry Pancakes w/ NuttZo drizzled on top
Tuesday: Chickpea, Kale, Tomato Soup
Wednesday: Leftovers
Thursday: Black Bean and Spinach Enchiladas – nothing says ‘I love you’ on Valentine’s Day like beans.
Friday: Avocado Egg Sandwiches
Saturday: Wing it!

I hadn’t heard the story behind NutZo before… impressive. I’ll have to keep an eye out for it to try sometime. And oops, totally forgot about Valentine’s day when I did my menu plan– I’m not sure what we’re doing yet… we often cook at home and then try to go out later on a less crazy night.

I think they are still expanding. I just did a search of my area and found that they do sell it at a small health food store nearby. Of course, you can always order it online too.
That soup sounds yummy. And I need to get my hands on some NuttZo apparently. Not sure what we’ll be having this week. I’m guess probably veggie burgers with baked sweet potato fries one evening.

Your menus are always so inspiring. There’s usually at least one thing I’d love to try. This week? The black bean enchiladas. I assume there will be a recipe coming? I haven’t got any spinach on hand, but I’d love to pin for future reference.
