Finally, A Snow Day!

The forecast called for snow starting last night into today so I planned on running on the treadmill this morning.

Winter has finally arrived!

6 miles – 6.5/0% warm up, intervals of 7.0/1% – 8.1/1%.  I even added a few sprints for a tenth of a mile @ 9.0/0%.  Running at 9 mph is fast!  The pace is 6:40(if I remember right).  I couldn’t imagine running that fast for more than a sprint.  At least I got to feel what it’s like to be an Olympic athlete for about a minute!

When I wake up in the morning, I’m usually starving.  I need to eat something before I run so I will grab a couple of dates.  I can’t believe I used to think these things were disgusting.  Try stuffing an almond inside of a date.  Delicious, quick snack!

Wow, my hands look old!  Moisturize, moisturize, moisturize…

Speaking of food, I tried a new breakfast.  Inspired by Tina, I made Oat-less Oatmeal.  At first I was a little skeptical.  Eggs for oats, really? The results?  Yum!  It’s a little slimier(is that a word?) but it tastes just like oats.

I made a few adjustments to the recipe.

2 eggs instead of 3 (organic eggs are expensive!)

2 tsp cinnamon(I really love cinnamon)

Sprinkle of wheat germ

1/2 tsp almond extract

This kept me full for 5 hours!  I love my regular oatmeal but I’m usually hungry within a couple hours.  That’s even with bulking it up with milk, ground flax, banana and nut butter. My tummy will usually start growling about mid morning but not today.  This is a keeper!

Since it was a snowy day and our Music Together was cancelled, I decided we needed to bake.  We made Spinach Blueberry Muffins.  You can find the recipe here.

I made these last week for the first time and everyone gobbled ’em up.  I thought they needed a little punch of fruit so I added blueberries.  I also used 1 cup of white whole wheat flour and 1/2 cup of whole wheat flour. Delicious!  The kids devoured them and even my “big kid” liked it.

After baking and snaking I thought we needed a change of scenery.  The kiddos have not been out in snow this year so I thought it might be fun to see their reaction.  L at least tried to walk in the snow.

Total time putting everyone’s winter gear on: 20 minutes

Total time spent outside in the snow: < 5 minutes

Thank God it’s nap time!  I’m going to enjoy a Spinach Blueberry Muffin and a cup of coffee in preparation for Round 2.  Have a great Thursday!

  1. We need snow!!! Looks beautiful…and so do your muffins. And your hands do not look old, mine look so much older….I’ve always had old looking hands though. Hmmmph. 😉

    1. Thank you! I guess if you saw the front of my hands you would think differently. I have to wash my hands constantly at work so my cuticles are a mess. I guess my dreams of being a hand model will never happen. 😉
