Eats Lately

Hey everyone!

So it’s been weeks since I’ve shared some of my eats lately. Truthfully, April was a weird month of eating. My tummy wasn’t feeling the greatest for some reason so I was stuck to eating really bland food on a lot of days. But things seem back to normal now. I’ve haven’t taken a whole lot of pictures of my food either for that reason. Brown and bland aren’t that photogenic. 🙂 But here are a few things that I’ve been enjoying.

Breakfasts and Snacks

  1. One of the best green smoothie bowls I’ve made in a long time – I think I threw everything but the kitchen sink in it. Too bad I only got to enjoy 1/4 of it since my little munchkins devoured the rest.
  2. CORE Defender Bars – Still loving these pre long run. They keep me satisfied with no issues.
  3. Homemade granola – My kids love granola so rather than shell out mega $$ for the organic variety, I make my own. Plus, I know exactly what’s in it!
  4. OIAJ – love!
  5. Blueberry Muffin for one – I had an intense craving for blueberry muffins for one week. This baby hit the spot!
  6. Sambazon Energy Smoothie – This surprised me and was actually really good! Stay tuned for a giveaway next week.
  7. Steven’s Homemade Energy Bars – I modified Lisa’s (and Steven’s) a little to abide to my #sugardetox this week. So good!
  8. Chocolate Zucchini Bread

  1. Southwestern Black Bean Pizza with avocado sauce
  2. Roasted Chickpea Salad
  3. Grilled Veggies for make your own quesadilla
  4. Bean enchilada’s with avocado sauce
  5. Roasted salmon and asparagus
  6. Pasta Primavera + Vegan Pesto
  7. Fish tacos
  8. Fish tacos at our favorite restaurant (I kind of really like fish tacos!).
  9. Thai Peanut Salad with Salmon
  10. Cauliflower Buffalo Wings – so spicy but addicting!
  11. Steamed veggies, baked chicken and pasta (Weird craving for chicken – can’t remember the last time I had it).
  12. Thai Quinoa Salad

It’s pretty obvious that we’ve been on a Mexican and Thai kick lately. They are my favorite so it’s sometimes hard to think of anything else that sounds good.

  1. I’ve been on a salad kick and mexican-ish kick (think nachos, salsa and corn added to EVERYTHING). Thai food is my absolute favorite thing, it’s a good thing I am picky about where I get it (when done wrong..it’s just no beuno) otherwise I’d be eating it daily and I am not enough of a chef to make it myself (maybe one day I will try!)

  2. All looks so good! I have to bring bread to a gathering this weekend and have some leftover zucchini, so I think I’m going to use your recipe.

    I think I am starting to crave summer foods as the weather changes. Can’t wait to hit the local farm for the first time and do some berry picking!

  3. Oh man! I need to make that chocolate zucchini bread! I got distracted on her website by a yummy acorn squash dish. YUM! Lately, I have been avoiding salads and greens. I’m not sure why. It’s odd! All I’ve been craving is watermelon since the weather is getting warmer.
