Eats From the Week 3

My post from yesterday couldn’t have come at a better time. I needed a reminder of what makes me happy after we got seriously dumped on. WTF – 10 + inches of snow in mid March is just plain cruel. And for that I give you a scowl.

Since it was snowing, I got the urge to bake and restock our snack supply. I wanted to make some of my usual chocolate balls but we were running low on dates. I improvised and came up with a really easy and delicious combo. So easy that it almost seems silly to put it into a recipe format!

Coconut Apricot Bites
 
Ingredients
  • ½ Cup Unsweetened Shredded Coconut
  • ½ Cup Unsulfured Dried Apricots
  • ½ Cup Sunflower Seed Butter
  • 1 Tsp Pure Vanilla Extract
Instructions
  1. Place all ingredients in a food processor.
  2. Blend till evenly combined.
  3. Roll bites into balls.
  4. Place in refrigerator for at least 30 minutes.

Four ingredients for one yummy snack! More additions could be added too. Almonds, walnuts and protein powder would all be delicious. It’s funny but I really don’t like the taste of coconut but it seems to be growing on me the more I eat it.

It’s time for a recap of some of my favorite eats from the week. Or better yet, the past few weeks. It’s been three weeks since the last Eats from the Week post. I’ve been kind of in a food rut lately. Nothing sounds really, really good to me so I’ve been making a lot of the usual standbys.

  4. Lavash bread hummus and veggie sandwich, sesame almonds, grapefruit
  5. Grilled mushroom and spinach wrap
  6. Roasted Corn Black Bean Soup
  7. Lavash bread veggie pizza, sugar snap peas and cucumbers
  8. Chickpea Curry Quinoa Stuffed Peppers
  9. Salmon tacos + pink lady apple

  1. Veggie nachos – seriously needed salt after Saturday’s 20 miler!
  2. Trader Joe’s Gourmet Jelly Beans – Easter’s coming!
  3. Black Bean Enchilada Bake

  5. Baked Haddock with greens, rice and salsa
  6. Starbuck’s new Hazelnut Macchiatoyum!

  1. Yummy eats this week! I fall into a food rut when life gets super crazy, but with things balancing out lately I have been a bit more creative in the kitchen and actually have the ENERGY to make a variety of meals.

  2. I have a habit of falling into a food rut. I carry 2 jobs on top of training and general life responsibilities so I have a pretty well planned out schedule each day to make sure everything I need to get done, does. Some days planning a special meal is just not an option for the time I have allowed. I have my usual Latte in the morning with PB&J at my desk. Lunch is pretty much always rice or soup at my desk. Dinner tends to vary, but usually goes with the “what is healthy-ish and easy” due to my scheduling. I need to be better about not getting into a food rut routine but sometimes it can be very difficult.

  3. The apricot coconut bites look amazing! I’ve made some similar but not with sunflower seed butter. Sounds heavenly! I’ve definitely gone through food ruts. Not in awhile though since Pinterest usually comes through with something new and creative for me! Although since I mainly do Paleo dinners now, I do find myself using favorites that we love more than finding new ones. I need to get a new Paleo cookbook or find more paleo blogs for ideas :-)

  4. Sorry for your mountains of snowfall! My sis lives in NY and I feel for her every time they get a heavy dumping. Those coconut apricot bites look delish – and only 4 ingredients! My kind of recipe :)
