Cherry Almond Granola Bars
  • 2 cups rolled oats (gluten free if needed)
  • 1 cup unsweetened dried coconut
  • 2 Tbsp chia seed
  • ½ cup almond butter
  • ⅓ cup honey
  • 1 tsp pure vanilla
  • ½ cup dried cherries, roughly chopped
  1. Line an 11x7 pan with parchment paper.
  2. In large bowl, mix oats, coconut and chia seeds. Set aside.
  3. In separate microwavable bowl, mix almond butter, honey and vanilla.
  4. Microwave 30 seconds. Stir till smooth.
  5. Pour almond butter mixture over oat mixture.
  6. Stir till combined.
  7. Pour mixture into prepared pan. Press and smooth evenly.
  8. Place pan in the refrigerator for 1- 2 hours to harden.
  9. Slice into bars and enjoy!
