"Cheesy" Mushroom Quinoa Bowl
  • 2 Sunshine Burgers (I used Shittake Mushroom) - thawed or warmed in the microwave for 30 seconds
  • Half of red onion, chopped
  • 1 cup chopped Mini Heirloom Tomatoes
  • 1 cup Baby Spinach
  • 1 cup sliced Baby Bella Mushrooms
  • "Cheesy" Sauce
  • 2 cups prepared Quinoa
  1. Spray a large skillet with olive oil.
  2. Add red onion and brown for 1-2 minutes.
  3. Add tomatoes, spinach and mushrooms and saute for 5 minutes.
  4. Add Sunshine Burgers and "crumble" into the skillet. Stir.
  5. Once combined, add "cheesy" sauce and prepared quinoa.
  6. Cover and let sit for 5 minutes till all ingredients are warmed.
