Oat and Quinoa Granola
  • 2½ cups old fashioned oats (Gluten free if needed)
  • 1 cup steel cut oats
  • ⅓ cup toasted quinoa (see directions)
  • ⅓ cup pure maple syrup
  • ¼ cup coconut oil
  • 1-2 tsp ground cinnamon
  • ½ cup unsweetened coconut flakes
  • ½ tsp salt
  • ½ tsp pure vanilla extract
  • Your choice of additional mix ins:
  • 1 cup dried fruit such as cranberries, cherries, blueberries
  • 1 cup sunflower seeds
  • 1 cup chopped nuts such as cashews, almonds, walnuts or pecans
  1. Preheat oven to 275 degrees. Line two baking sheets with parchment paper or tin foil.
  2. In large bowl, add old fashion oats, steel cut oats, unsweetened coconut flakes, cinnamon, and salt. Toss and set aside.
  3. Place quinoa in a small fry pan and toast over medium heat, constantly stirring.
  4. When quinoa begins to "pop", it's toasted. Remove from heat and add to oat mixture. Stir well.
  5. While quinoa is toasting, add coconut oil, maple syrup and vanilla to a small saucepan. Heat it over medium heat till it boils. Remove from heat and pour over oat/quinoa mix.
  6. Toss to coat.
  7. Divide the granola between the two baking sheets. Bake for 40 minutes or until slightly brown.
  8. Stir every 10 minutes.
