Chocolate Coconut Energy Bars
 
Ingredients
  • 1½ cups dates
  • 2 cups almond meal
  • ½ cup unsweetened cocoa powder
  • ½ cup unsweetened dried coconut
  • 2 tsp pure vanilla extract
  • 1 tsp cinnamon
  • ¼ tsp sea salt
Instructions
  1. Soak dates in warm water for approximately 2 hours.
  2. Drain dates and place in a food processor with almond meal, coco powder, dried coconut, vanilla extract, cinnamon, and sea salt.
  3. Blend till mixture begins to clump together.
  4. Place mixture in a parchment lined baking pan (8x8).
  5. Spread out evenly.
  6. Place in freezer for 3 hours.
  7. Slice into 12 bars.
