Pumpkin Raisin Oat Cookies
 
Ingredients
  • ¾ C Pure Pumpkin
  • 1 Egg or 1 Flax "egg" (1 Tbsp ground flax seed + 3 Tbsp warm water)
  • 1 Tsp Pure Vanilla Extract
  • ¾ C White Whole Wheat Flour
  • 1½ C Rolled Oats
  • ¼ C Brown Sugar or sugar of your choice
  • ¼ Tsp Baking Powder
  • ½ Tsp Baking Soda
  • 1½ Tsp Cinnamon
  • ¼ Tsp Nutmeg
  • ¼ Tsp Ground Cloves
  • ½ C Raisins
Instructions
  1. Preheat oven to 350 degrees.
  2. Line baking sheet with parchment paper or Silpat.
  3. Mix pumpkin, egg and vanilla in a large bowl till combined.
  4. In separate bowl, combine flour, oats, brown sugar, baking powder, baking soda and spices.
  5. Combine dry to the wet ingredients. Do not overmix.
  6. Drop dough by spoonfuls onto cookie sheets and slightly flatten into desired shape.
  7. Baked 12-14 minutes until lightly browned.
  8. Allow to cool on cookie sheet for a few minutes before transferring to wire rack.
