Chocolate Chip Oatmeal Cookies
  • 1.5 Cups oat flour
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • sea salt
  • 2 tsp pure almond extract (or vanilla extract)
  • 1 egg
  • 5 Tbsp coconut sugar
  • ½ Cup melted butter or coconut oil (I used Barlean's Butter Flavored Coconut Oil)
  • ¼ Cup mini chocolate chips
  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  2. Blend old fashioned oats into oat flour. Be sure to measure the oats after blending to be sure it's 1.5 cups.
  3. Combine oat flour, baking soda, cinnamon and sea salt (as desired). Set aside.
  4. In separate bowl, beat almond extract, egg and coconut sugar.
  5. Add melted coconut oil and mix.
  6. Stir wet mixture into dry till combined.
  7. Add mini chocolate chips and stir.
  8. Place in oven and bake for 10-12 minutes.
  9. Remove from oven and let cool before enjoying.
