Chocolate Peppermint Donuts
 
Ingredients
  • ½ Cup Almond Flour
  • ½ Cup Oat Flour
  • ¼ Cup Coconut Flour
  • ¼ Cup Unsweetened Cocoa Powder
  • 1 tsp Baking Powder
  • ¼ tsp salt
  • 2 Large Eggs
  • ¼ Cup Coconut Sugar
  • ½ Cup Organic Plain Greek Yogurt (I use Stonyfield)
  • ½ tsp Peppermint Extract
  • ½ tsp Pure Vanilla Extract
  • 2 Tbsp melted Coconut Oil
  • ½ Cup Milk of your choice
  • 2 Crushed Candy Canes
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine almond flour, oat flour, coconut flour, cocoa powder, baking powder and salt in a large bowl.
  3. In a separate bowl, combine eggs, coconut sugar, Greek yogurt, vanilla, peppermint, coconut oil and milk.
  4. Add wet to dry and stir till just combined.
  5. Grease or spray donut pan.
  6. Distribute batter evenly.
  7. Bake 15 minutes. Remove from oven and allow to cool 10-15 minutes in pan before removing.
  8. Once completely cooled, sprinkle crushed candy canes over donuts.
