Kale Blueberry Superfood Salad
  • 2 bunches of kale, stems removed
  • 1 cucumber chopped
  • ½ of red onion, chopped
  • ½ cup Goji berries
  • ½ cup roasted sunflower seeds
  • 1 pint fresh blueberries
  • Dressing:
  • ½ cup Extra virgin olive oil
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons apple cider vinegar
  • 1 clove garlic, minced
  • salt and pepper to taste
  1. Place dressing ingredients in a small bowl. Whisk together.
  2. Place kale in large bowl. Pour dressing over it. Using your hands, massage the dressing into the leaves for 5 minutes.
  3. Place cucumber, red onion, Goji berries, sunflower seeds and blueberries in with massaged kale.
  4. Using your hands or with a spoon, gently mix.
  5. Place in refrigerator to "marinate" for 10-15 minutes or longer for maximum flavor.
