Crock Pot Taco Soup

Workout – Back to the treadmill for another fun run.  I decided to run in 800s today.  At first my whole body was not fully awake.  It was 5 a.m. after all.  I was contemplating if a run was out of the question.  After about 1 mile my legs started to loosen up and I was good to go for the duration. Good run!  I’m glad I stuck it out.

By the way, does anyone need some sweeping done?  What is it with kids, brooms and vacuums?  Mine love ’em!  Of course, they won’t want to pick one up in a few years when it will really matter. L found a broom just his size at music class and wanted to take it home.  It was really fun prying the broom from his little hands so we could leave.

Crock Pots

I love my crock pot!  If you have one, I suggest you use it.  If you don’t, you need to get one!  And a food processor but let’s focus on crock pots right now.  I use mine at least once a week.  I love that you can dump all your ingredients in, turn it on and go about your day.  Plus, your house smells wonderful as dinner is being made!  We got our first crock pot for a wedding gift almost 10 years ago.  I remember opening it and wondering what I would do with it.  I always thought they were only made for hearty meat dishes.  Since I don’t eat a lot of meat, I didn’t think it was something we needed. We actually returned it and bought something else!  About 5 years ago, I bought another and have been using it faithfully.  I’ve learned you can make ANYTHING in a crock pot.  Sometimes I’ll follow specific recipes I’ve found online or I just throw whatever I have on hand.  One of my new favorites is Taco Soup.  I actually put a chicken breast in with this but it would be just as tasty with just beans.  Ron loved it, too.  The kids gobbled it up the first night and even loved the leftovers.  I served it with homemade tortilla chips (cut up tortillas in wedges, brushed with EVOO, and baked for a few minutes), avocado, and cheddar cheese.

Crock Pot Taco Soup

Don’t judge this soup just by more poor photography skills!  It’s really, really good and easy.  This is a keeper and will be making a weekly appearance in our house.

Crock Pot Taco Soup
 
Ingredients
  • 1 pound chicken breasts
  • 28 oz. crushed tomatoes
  • 2 cups frozen corn
  • 2 cups black beans
  • 2 cups pinto beans
  • *Ranch Seasoning
  • **Taco Seasoning
  • 1 small red onion, chopped
Instructions
  1. Combine all in the crock pot.
  2. Heat on low 4-6 hours.
  3. Garnish with cheese, avocado, sour cream or tortilla chips.

*You can use a packaged Ranch Seasoning mix but I make my own:

Ranch Seasoning Mix:

1 tsp dried chives

1 tsp dried parsley

1 tsp dillweed

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp salt

1/4 tsp black pepper

**Same with Taco Seasoning.  Here’s what I use (makes 6 tbsp of seasoning):

2 tbsp chili powder

1 tbsp cumin

1 tsp paprika

1 tsp salt

1.5 tsp black pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp dried oregano

14 tsp crushed red pepper or more if you like it really spicy

  1. Yum! We love the crock pot too…. thanks for sharing your spice recipes, too. I avoid the packaged spice mixes but don’t have an exact recipe I follow. Oh, yes, we love brooms in our house, too!!
