Almond Flour Dutch Baby – WIAW

Hi Friends! It’s Wednesday so it’s time to go into a food coma just by looking at pictures.

Last week I posted this picture on Instagram (you can follow me @happyfitmama if you are interested) and in Friday’s post.

It seems everyone was in love with my baby that doesn’t cry or need a diaper change (Thanks, Lisa for your cute tweet!). For those of you who don’t know what a Dutch Baby is, the dough puffs up into a big ball while it cooks. Within a few minutes of coming out of the oven, it deflates. It’s similar to a pancake and can be served with fresh fruit, real maple syrup or fruit preserves. Here’s the recipe:

Almond Flour Dutch Baby
1/2 C Almond Flour
1/2 C White Whole Wheat Flour
pinch of salt
3 eggs
1 C Vanilla Unsweetened Almond Milk (or of your choice)
1 tsp vanilla
2 Tbsp Honey
1 tsp canola oil
Preheat oven to 425 degrees.
Combine first 3 ingredients. Set aside.
In separate bowl, whisk the eggs till beaten.
Add milk, vanilla and honey to eggs.
Whisk the dry ingredients to wet.
Coat 9″ pie dish with oil. Pour batter into dish.
Bake 25 minutes. *The dough will puff up in oven and deflate when cooled.
Cool and serve.

And now for WIAW! Well, almost. I didn’t get a picture of everything so I had to recycle a few from previous WIAW posts.

Breakfast: Fresh Blueberry Oats with unsweetened vanilla almond milk, chia seeds, cinnamon and almond butter

Lunch: Black Bean Salad made with corn, red onions, grape tomatoes, yellow peppers and cilantro. I had the last remaining crumbs of blue tortilla chips to add some crunch to it. Pineapple on the side.

Dinner: Spinach and Fresh Strawberry Salad with cucumbers, walnuts, poppy seeds and avocado and a simple dressing of Apple Cider Vinegar.

Snacks: Handful of dark chocolate chips, dried cherries and almonds. Homemade iced coffee and Chobani yogurt.

*I actually ate a mango Chobani yogurt without anything added to it as I was rushing to get out the door for Yoga in the Park.

Dessert: My father in law likes to make apple pies. Every time the inlaws visit, he makes a pie and pasties from scratch. I think pasties are disgusting so I won’t touch them. However, even though I’m not a big pie fan I’ll gladly partake in a slice or two of this pie. Warm apples and cinnamon are an irresistible combination.

  1. Being English I am going to say cake. We don’t really do swwt pie over here in the same way the Americans do, ours tend to be filled with steak and kidney.

    What are chia seeds?
